Lovers of all things sweet were in for a decadent treat with the launch of the One&Only's Patisserie


Already an epicurean haven with two stellar restaurants – the first Nobu in Africa and Gordon Ramsay’s maze – the urban resort is now offering fresh homemade delights to go, as well as catering for special events.

The glass-structure Patisserie forms part of maze’s show kitchen and offers diners a delightful behind the scenes insight into the world of pastry chefs.

Executive Chef Michael McCalman, responsible for overseeing all the resort’s restaurants, commented: “We are delighted to offer an array of European delicacies ranging from coffee and amaretto delice and couverture chocolate sticks encased in pastry to traditional malva pudding with a One&Only twist, classic butter croissants and apricot brownies to take home. In addition to the take-away service, we can also cater for special events such as children’s birthday parties, kitchen teas, bar mitzvahs and weddings.”

No stranger to supplying urban households from Bangkok to Hong Kong with their daily fix of freshly baked goods, Australian-born Chef Michael firmly believes that Capetonians will embrace the Patisserie’s take away and catering service. “Patrons can expect the freshest traditional delicacies in Cape Town made with only the finest ingredients.”

The icing on top of the Patisserie’s creative team is the former Regional Head Pastry Chef and Chocolatier for Lindt & Sprungli Swiss Chocolatier, Dimo Simatos.

With qualifications from Ecole Lenotre Pastry & Confectionery in Paris, Fabilo International Confectionery School in Lucerne and Notter School of Confectionery Arts in Washington, to name a few, Chef Dimo’s vision for the Patisserie is clear: “I am a progressive and focused craftsman and through the better understanding of my environment, the abundance of raw ingredients South Africa has to offer and my relationships with my fellow chefs I believe that the One&Only Patisserie will offer a truly gastronomic experience and boundless innovative ideas for wedding and other event planners.”

Some of the most decadent items on offer are arguably the 1,5 metre high cup cake tower and layered macaroon cake, while tower wedding cakes are totally up to the client’s imagination.

One&Only Cape Town also offers the delicacies at Afternoon Tea in Vista Lounge & Bar daily, and here just any old pot won’t do when choosing from 35 teas, representing eight different tea families.

According to Chef Michael it is essential that different tea families are brewed and served in different pots as not to influence or spoil the taste.

The tea families include Oolong, green, black, white, infused and fruit teas, and each family is brewed and served in a different pot - Chinese tea in porcelain pots, fruit infused tea in glass and green teas in heavy iron pots.

The One&Only Patisserie is open daily. Patrons can visit the Patisserie adjacent to maze throughout the day or place orders telephonically by calling 021 431 5222.
