A Grand New Year's Eve Dinner at Sevruga

Sister to Cape Town’s beloved Beluga Restaurant, Sevruga is making its mark as a signature Cape Town restaurant with its New York style entrance, polished marble and solid wooden floors, solid American walnut bar counter and designer chairs with opulent and imported fabric.
An elaborate menu incorporates approximately 200 wines, with the menu ranging from humble dishes to taste sensations, and Sevruga will be open for New Year’s Eve dinner in Cape Town as 2008 creeps towards 2009.
"Our philosophy when creating Sevruga was very much the same as when we create our signature dishes. We use the best possible raw ingredients combined with awesome professional and creative suppliers, as well as craftsmen, to create a truly amazing space", explains restaurateur Oscar Kotzé.
New Year’s Eve dinner menu at Sevruga: On Arrival: A flow of welcome cocktails, mojito’s, kir royals and martinis.
Amuse-Bouche: Sallop and Prawn Cocktail - Diced prawns coated in lemon aioli, topped with a caramelized scallop and finished with a touch of caviar.
Second Course: King Crab Ravioli - Delicate white crab meat wrapped in saffron pasta served with wilted pak choi and drizzled with a dill and chive cream
OR Smoked Springbok Carpaccio - Lightly smoked, fresh rocket salad, red pepper coulis and shavings of parmesan cheese
OR Plum Tomato Consommé made from ripe plum tomato, infused with basil and cracked black pepper, served with goat’s cheese tortellinis
OR Taste of Salmon - Salmon roses, salmon tartar rolls and salmon sashimi
OR Paper Prawn Salad - Marinated prawns wrapped in a crispy pastry, tossed with mixed salad and mint, dressed with a hot and sour nahm jim salsa.
Third Course: Tempura Oysters - Fresh, succulent, West Coast oysters, in a light tempura batter served with a creamy tartar sauce and lemon crème fraiche
OR Duck Liver and Confit of Duck Leg Terrine - A delicate duck terrine, infused with Asian flavors served with a litchi, coriander and five spice chutney with toasted brioche
OR Salmon Carpaccio with Asian coleslaw made from Japanese mayo, Chinese cabbage and coriander topped with deep-fried capers
OR Spider Roll - California rolls with crispy soft shell crab and teriyaki sauce
OR Gorgonzola and Caramalized Pear Salad - Creamy gorgonzola tossed with mixed salad leaves, caramelized pears and honey glazed walnuts, dressed with balsamic and olive oil.
Fourth Course: Cajun Spiced Norwegian Salmon on crushed saffron potatoes with a tomato, basil and strawberry salsa and a citrus beurre blanc
OR Kingklip and Scallops - Oven roasted kingklip with pommes croquettes, seared baby scallops and a marjoram veloute
OR Crustacean Platter - One tiger giant, two langoustines, 3 kings and salt-fried calamari served with pommes neuf, coriander rice and lemon beurre blanc
OR Four Season Platter - Prawn tempura rolls, seared tuna roses, king crab and bean curd nigiri and rainbow rolls
OR Fillet of Beef - A succulent cut, pan-fried beef with rosemary potato fondants, shitake mushrooms stuffed with bone marrow and brioche and a bordelaise jus
OR Slow Roasted Duck - Half a slow roasted duck with jasmine egg fried rice and plum sauce.
Fifth Course: Apple Tart Tatin with cinnamon ice cream OR Chocolate Fondant served with white chocolate ice cream OR Sevruga Fruit Plate with a yoghurt ice cream OR Créme Caramel Martini.
