Welcome “Mat”: Kir Royale with canapés and many-mushroomed soup with grissini

Starters: Salmon 3 Ways consisting of Gravlax, Savoy Smoked and Tartare with Dill Oil and Rocket OR Terrine of Guinea Fowl, Pistachios and Cranberries with an Orange and Ginger Sauce OR Warm Fiore di Latte Cheese with Tomato, Cucumber and Beetroot Jellies and Basil Oil and a Mesclun Salad.

Main Course: Honey and Pepper Roasted Deboned Quail stuffed with a Date, Apricot and Almond Pilaff OR Grilled Linefish on Corn Fettuccine with Asparagus, Julienne Vegetables and Roasted Red Pepper Coulis OR “Christmas” Kasha in Buckwheat Crepes with Grilled Mushroom and Shaved Fennel, Balsamic and Port Reduction OR Rare Spice rubbed Venison Loin with Chestnut Spätzle, Mulled Wine Sauce and poached Morello Cherries.

Desserts: “Jan Groentjie” Lavender infused Cheese with Citrus Mostardo, Egg Nog Pre-Dessert and Bouche de Nöel with Mushroom Meringues and Candied Nuts.
