NEW: La Colombe’s Indian-inspired Eatery To Open In Franschhoek
It’s a tasting menu with an ever-rolling sorbet trolley of palate cleansers
La Colombe is growing a new off-shoot: Epice (French for spice) is a warm and intimate 45-seater that’s soon to open in Franschhoek and its menu will focus on bold flavours.
The restaurant was inspired after a recent trip to India by the owners and head chef. It’s co-owned by Scot Kirton and James Gaag of the La Colombe, and will be headed up by La Colombe’s former sous chef, Charné Sampson.
HEAD CHEF WORKED AT TEST KITCHEN
Charné has an impeccable cheffing pedigree: she’s a graduate of Silwood School of Cookery, and has worked in Cape Town’s top kitchens – Myoga, The Restaurant at Waterkloof and The Test Kitchen. Until recently, she worked as sous chef at La Colombe. Now she’s exploring her own venture (under the leadership of Scot and James) with Épice.
IT’S GOING TO BE A TASTING MENU
The menu will be a tasting format, with or without wine pairing. It’s all still a work in progress and dishes and prices are yet to be confirmed. But Kirton gave us a sneak-peek at what to expect: one starter will be lobster ravioli with saffron, ginger and fennel.
“Because it’s a tasting menu and everyone will get everything, the menu will be based around food people want to eat, there won’t be anything too far out there,” he said, adding that it will also be suitable for families.
Another treat is sure to be the sorbet trolley that will come to diners’ tables offering an ever-changing selection of palate cleansers to choose from such as mini-watermelon slices, Granny Smith lollipops, blood-orange sorbet wedges, litchi spheres and more. He’s not saying yet what these flavours will be, but judging by La Colombe’s palate cleansers, like the balls of grenadine that explode in the mouth, all of it will be a gastronomic adventure.
