Now Open: What Margot Janse and a Buff Chef are Cooking Up at This Healthy Restaurant
The food at Nourish in Paarl is free of free from preservatives, dairy, sugar and gluten, but full of flavour. It’s also surrounded by two luxurious accommodations worth a visit.
It’s the unexpected that makes dining at Nourish in Paarl such a treat. Take the cauliflower ice-cream, which you might think is a stretch of the imagination until you spoon it into your mouth – the cool, creamy dessert not only surprises but satisfies.
Nourish is a health restaurant; their food is free from preservatives, dairy, sugar and gluten. Because they believe that food is the foundation for health and contains all the flavour we need they don’t try to sneak in “flavour” artificially. Ingredients are sourced from local suppliers and bio-dynamic farmers, whose farming methods follow nature’s natural cycle, as well as from the restaurant’s kitchen garden, where everything is either edible or has healing properties, and often both.
“Each dish is so flavoursome and aromatic, that if we didn’t tell them it was made from all raw, honest, natural ingredients, they wouldn’t realise they’re eating healthy food,” says Ingrid Hindle, CEO of Sante Wellness Retreat and Spa, which houses Nourish, the spa and the luxury accommodation.
Nourish’s menu evolves with the seasons, so they are always serving fresh options: Like the oyster and grapefruit starter, the smoked paprika and lemongrass soup with avocado and coriander, or the char-grilled ostrich fillet and sprout massaman curry main course options. Another gratifying surprise on the five-course menu is the macadamia nut cheese platter with pear preserve and biscotti.
Muscular Terrence Ford fits the part of executive chef at Nourish. He is supported by rockstar chef Margot Janse, who left Le Quartier Français and The Tasting Room in 2017 after seven years for other projects, including consulting at Nourish. They are constantly changing the menu to suit the seasons and the available produce, to prepare unusual, healthy dishes that offer something for everyone, including vegetarians and vegans.

The luxurious Sante Wellness Retreat and Spa, which houses Nourish, is a one-of-a kind retreat and the mission is beyond skin deep. You can get professional health guidance at their Health Optimisation Clinic over and above the usual spa treats. You can book in for a day or half day and luxuriate in their Roman-styled indoor heated pool.

Tip: The executive chef personally recommends the vegan creme brulee, which he says would be most surprising to guests.
The Bill: The three-course menu costs R395 and for the five-course option you pay R495.
Opening Times: Nourish is open to the public for dinner Thursday to Saturday from 7pm to 10:30pm.
