Ice cream is a form of chemistry.
Essentially created by four main ingredients: water, sugar, fat and air – the true science behind the semi-frozen dessert comes with combining flavour, texture, density and temperature and, ultimately, crafting an unforgettable ice cream experience.
And this precise notion – the ‘devil is in the detail’ afterall – is exactly what Unframed Ice Cream, a brand new artisan ice cream parlour located on the Mother City’s trendy Kloof Street, is all about. Founded by Yann Rey, the one-of-a-kind establishment – which officially opened its doors in August 2016 – strives to provide Cape Town with the best sorbet as well as top-notch dairy and vegan ice cream in the biz made from only natural ingredients.
“I have a little addiction to ice cream,” the French-born owner confesses.
Although an investment banker by trade, Yann has always had a great passion for food, and as a teenager expressed an interest in becoming a chef. Despite studying engineering and business, Yann always felt “at ease in the kitchen” and knew that he would one day return to the culinary arts. Six years later, whilst in the Big Apple, the gastronomic bug bit once again.
“In New York there was an ice cream parlour [Morgensterns – one of the city’s finest], so I went in and started chatting to the guys behind the business and I thought: I could do this but with my own twist,” Yann explains.
After travelling to the Mother City in 2015 to take advantage of the epic kite boarding opportunities, Yann fell in love with the city and decided to launch his all-new ice cream brand in Cape Town. Sourcing his products from around the globe – the cream is specifically imported from France – Yann ensures that all his ingredients are of the highest quality possible.
“That’s our thing: we’re trying to do things a little differently by creating new flavours and using the best ingredients,” says Yann. “The idea is that we experiment in the Cape Town lab with a whole lot of different things. We do sorbet and diary ice cream as well as innovative vegan ice creams.”
Experimenting with the concept of an ice cream shop within an art gallery, Yann has found a unique parallel between the creamy dessert and creative skill and wishes to put an original flair back into the old time favourite. And with a product and recipe developer like renowned French ice cream master Stephane Auge at the helm, there is no doubt that every scoop of Unframed ice cream will be a memorable one.
There are 12 ice creams of offer (including two sorbet and two vegan options – made with coconut milk), which change constantly depending on daily inspiration and seasonal produce. Customers can expect exotic flavours such as lemon grass and jasmine rice, peanut butter, burnt white chocolate and lime, lemon and basil sorbet, to name but a few. What’s more, the chic hub also offers a unique range of toppings and sauces to add to the scoops including toasted coconut chips and caramel nuts, raw date caramel and pink praline swirl (candied almonds from Yann’s hometown of Lyon) sauce as well as vegan-friendly organic ‘superfoods’, such as raw white mulberries and raw honey.
With the production ‘lab’ right behind the modern freestanding display counter, everything from the preparation of the mixture and churning of the blend to the ice cream machine process and fixed freezing methods can be seen in-store. “We want people to see what is going on here and how we make our ice cream. We do everything in-house and from scratch,” Yann enthuses. “I’m also on a mission to educate people about ice cream”.
Determined to constantly investigate, bond and collide innovative and stirring flavours in the lab, Unframed Ice Cream embodies its name rather perfectly; unframed – unrestricted and unbound with endless ice cream possibilities. “It’s our mantra; our handle is ‘life unframed’, concludes Yann. “We try to put a new spin on everything we do”.
